French toast with strawberry sauce

  • frozen unsweetened strawberries  2 cups, very coarsely chopped
  • water  1/4 cup
  • sugar  1 tablespoon
  • eggs  4 large
  • low-fat (1%) milk  3/4 cup
  • vanilla extract  1 teaspoon
  • whole-wheat or multigrain bread  8 slices
  • canola oil   2 teaspoons


  1. To make sauce, combine strawberries and water in small saucepan and set over low heat. Cook, stirring occasionally, until berries are thawed and saucy, about 2 minutes. Remove saucepan from heat and stir in sugar until dissolved. Set aside.
  2. To make French toast, beat eggs, milk, vanilla, and cinnamon in large shallow bowl. Dip bread, one slice at a time, into egg mixture until well coated on both sides.
  3. Brush oil on griddle or in very large nonstick skillet and set over medium heat. Cook French toast, in batches, until deep golden, about 2 minutes per side, transferring to plate as it is done, covering to keep warm. Place 2 pieces of French toast on each 4 plates and spoon sauce on top.
