Here is a super simple, very basic recipe for slow cooker chili made with turkey sausage and 3 different kinds of beans. This chili has just enough heat for our tastes without being overly spicy. Like most chilis, it is even thicker and more flavorful the next day.

A great candidate to make ahead and freeze in smaller portions, it is such a treat to have yummy WW friendly foods like this chili in the freezer ready and waiting for those nights when you are too tired or unmotivated to cook.


This is a really easy recipe that requires very little chopping, perfect for busy days. Ground turkey can sometimes be bland, so to make this chili more flavorful I used hot Italian-style turkey sausage. Of course, you can adjust the spices to suit your tastes, keeping in mind that chili powder is one of those spices that can intensify during long slow cooking. I like to cook my ground meat and onion in the microwave before adding it to the slow cooker, but you could always use your stovetop and a skillet instead.


  • Different meats - Substitute whatever lean ground meat or combination you like best, turkey, chicken, lean beef, bison, pork, sausage etc.
  • Different beans - Choose whatever combination of beans you like best or have on hand.
  • Vegetarian/Vegan - Skip the meat and add 1 to 2 extra cans of beans or your favorite meatless crumbles.
  • More vegetables - chopped bell pepper, cauliflower or corn would all be good.

  • 1  pound uncooked hot Italian style turkey sausage
  • 1  cup chopped onion
  • 1  can (28 ounces) diced tomatoes
  • 1  can (14-15 ounces) tomato sauce
  • 1  can (4-6 ounces) chopped green chilis, drained
  • 1  can (14-15 ounces) chickpeas, rinsed and drained
  • 1  can (14-15 ounces) black beans, rinsed and drained
  • 1  can (14-15 ounces) pinto beans, rinsed and drained
  • 1-2  tablespoons chili powder (to taste)
  • 1-2  teaspoons ground cumin (to taste)
  • 1  teaspoon garlic powder
  • 1  teaspoon dried oregano

Optional Toppings:

  • chopped onion
  • Chopped fresh cilantro
  • Reduced-fat shredded cheddar cheese
  • Fat free sour cream or Greek yogurt


Place the turkey sausage and onion in a microwave safe bowl and cook until it's no longer pink and the onions are soft (5 to 8 minutes depending on the strength of your microwave). Drain any fat and transfer to the slow cooker. Add the tomatoes, tomato sauce, chilis, beans, chili powder, cumin, garlic powder and oregano. Stir to combine. Cover and cook on LOW 6 to 8 hours. Garnish with the optional toppings and enjoy!
